Three Pepper Stir Fry Over Quinoa
- 1 red pepper
- 1 orange pepper
- 1 yellow pepper
- 1 small onion
- 1 1/2 tsp fresh garlic, minced
- 1/2 bunch fresh spinach
- 1 tsp sesame seed oil
- 1 tablespoon coconut oil
- soy sauce
- fresh lime juice
- sea salt
- red pepper flakes

- Cut peppers into chunks. Dice onion.
- In a medium size pan add coconut oil and sesame oil. Turn heat to medium high.
- When coconut oil is melted add peppers, garlic, onion, and a pinch of sea salt.
- Cook for about 5 minutes. Add spinach, a splash of soy sauce and the juice of 1/2 of a lime.
- Continue cooking until spinach is wilted and peppers are bright and colorful.
- Serve peppers over cooked quinoa. Garnish with red pepper flakes and extra soy sauce.
