Three Pepper Stir Fry Over Quinoa

  • 1 red pepper
  • 1 orange pepper
  • 1 yellow pepper
  • 1 small onion
  • 1 1/2 tsp fresh garlic, minced
  • 1/2 bunch fresh spinach
  • 1 tsp sesame seed oil
  • 1 tablespoon coconut oil
  • soy sauce
  • fresh lime juice
  • sea salt
  • red pepper flakes

  1. Cut peppers into chunks. Dice onion.
  2. In a medium size pan add coconut oil and sesame oil. Turn heat to medium high.
  3. When coconut oil is melted add peppers, garlic, onion, and a pinch of sea salt.
  4. Cook for about 5 minutes. Add spinach, a splash of soy sauce and the juice of 1/2 of a lime.
  5. Continue cooking until spinach is wilted and peppers are bright and colorful.
  6. Serve peppers over cooked quinoa. Garnish with red pepper flakes and extra soy sauce.
