Mexican Quinoa Salad

 

  • 3/4 cup The Grain Market Quinoa
  • 1/2 green pepper, diced
  • 1/2 red pepper, diced
  • 3 - 4 green onions, diced
  • 1 jalapeno, diced
  • 1 cup sweet corn
  • 1 cup rinsed black beans
  • 2 - 3 large kale leaves, chopped fine
  • 1/4 - 1/2 bunch cilantro, chopped fine

Dressing: 1/4 apple cider vinegar, 1/4 cup sugar, 1/2 teaspoon salt and pepper, 1 teaspoon olive oil, 1 teaspoon water.

 

  1. Rinse quinoa well.
  2. In a small saucepan combine quinoa, 1/2 teaspoon of salt, and 3/4 cup of water.
  3. Bring mixture to a boil. Cover and set to low. Cook for 15 minutes, or until moisture is absorbed.
  4. Make dressing and set aside.
  5. Combine all ingredients and stir just to combine.
  6. Pour dressing over ingredients.
  7. Mix well.
  8. Enjoy! (This salad gets even better with time as all the flavors combine)
