- 3/4 cup The Grain Market Quinoa
- 1/2 green pepper, diced
- 1/2 red pepper, diced
- 3 - 4 green onions, diced
- 1 jalapeno, diced
- 1 cup sweet corn
- 1 cup rinsed black beans
- 2 - 3 large kale leaves, chopped fine
- 1/4 - 1/2 bunch cilantro, chopped fine
Dressing: 1/4 apple cider vinegar, 1/4 cup sugar, 1/2 teaspoon salt and pepper, 1 teaspoon olive oil, 1 teaspoon water.
- Rinse quinoa well.
- In a small saucepan combine quinoa, 1/2 teaspoon of salt, and 3/4 cup of water.
- Bring mixture to a boil. Cover and set to low. Cook for 15 minutes, or until moisture is absorbed.
- Make dressing and set aside.
- Combine all ingredients and stir just to combine.
- Pour dressing over ingredients.
- Mix well.
- Enjoy! (This salad gets even better with time as all the flavors combine)
