Chewy Nut and Seed Bars

 

 

  • 1 cup roughly chopped almonds
  • 3/4 cup roughly chopped cashews
  • 1/2 cup roughly chopped roasted peanuts
  • 1/4 - 1/2 cup roughly chopped The Grain Market Pumpkin Seeds
  • 1 tablespoon The Grain Market Flaxseed, ground fine
  • 1 tablespoon The Grain Market Chia Seeds
  • 1 cup crispy rice cereal
  • 1/2 cup honey
  • 1/4 cup brown sugar
  • 2 teaspoons vanilla

 

  1. In a large mixing bowl combine all nuts, seeds, and rice cereal. Stir to combine.  Set Aside. 
  2. In a small saucepan combine honey, vanilla, and sugar.
  3. Bring to boil and continue cooking for 1 minute. 
  4. Remove from heat and let the mixture rest for 3-4 minutes.
  5. Pour mixture over nuts and stir well, adding more crispy rice if needed.
  6. Onto a parchment-lined baking sheet press mixture firmly to form a long rectangle against the edge of the pan. (use about 1/4 of the pan)
  7. Place in the refrigerator overnight.
  8. When the mixture is firm cut into bars.
  9. Enjoy! (store bars in the refrigerator)
