- 3 - 4 ripe peaches
- 1-2 Tbsp honey (or more if you’re a real sweetie!)
- 1 Tbsp The Grain Market Chia Seeds
- 1 tsp Lemon juice, water (optional), vanilla extract (optional)
- Peel and chop peaches and place in small pot. Add chia, lemon juice and honey to the pot and stir.
- Warm peach mixture over medium heat for several minutes, mashing as the mixture warms. Add vanilla if using. If mixture appears too dry, add water one TBSP at a time until desired consistency is reached.
- Transfer peach mixture to blender and pulse several times for a chunkier jam, or blend until smooth for a smoother jam.
- Spoon jam into two jelly jars. Let cool on counter.
- Store jam in refrigerator for one to two weeks
