We love the smell of cookies baking in the oven. As the aromas swift through the house, all my sweet cookie monsters gather to the kitchen. Here are a few tricks that can ensure the perfect batch every time.
First, always use real butter completely softened. This will ensure the perfect crunch to chew ratio you are looking for.
Second, always use a good amount of brown sugar. For the same purpose, using brown sugar gives the cookie a crisp outer layer, while leaving the middle soft. If your recipe calls for white sugar, use half white and half brown sugar.
Third, add baking soda, salt, and baking powder to the first cup of flour and mix well. Then add 1/2 cup of flour at a time. The amount of flour in your dough can make or break your cookies. Too much will create a tough, dry texture. Not enough will give you a pancake-style cookie that is crunchy. The same rings true for oats. Add a 1/2 cup at a time to find the right consistency.
Fourth, make the dough into 1 inch balls to bake. This ensures an even spread during baking and will prevent crusty edges.
Fifth, Do not overbake. When the first slight cracks appear and there is a slight browning on the top of your cookies, remove them from the oven. Let them rest on the cookie sheet for 3 to 5 minutes.
