
The coronavirus has put a damper on a lot of aspects in our lives. During this time we can take advantage of our time together. We can make memories that will stick with us for years to come when we remember this temporary epidemic period. Creating something together can be a great activity everyone can enjoy. Something we love to make together are oatmeal energy balls. Everyone loves to eat them and they can be created to fit many different taste buds. We love oats, peanut butter, honey, vanilla, chia seeds, flax seeds, white chocolate chips and craisins. Simply mix all the dry ingredients, add the wet and combine well. Form into 1 inch balls and refrigerate for 30 - 45 minutes. Chia seed jam is another quick and easy recipe even the littlest of hands can help prepare. Simply take 2 cups of fresh or frozen berries and 2 tablespoons of sugar. Heat over the stove top on medium heat until the natural juices from the berries are released. Remove from heat and cool for 5 to 10 minutes. Stir in 2 tablespoons of chia seeds and stir well. Place in the refrigerator overnight. In the morning enjoy a dollop in your oatmeal or slather onto your toast. Simple and delicious.
