Quinoa, commonly pronounced as Keen - wah, is another one of those super star foods. It is gluten free, high in protein, fiber, magnesium, calcium (nearly six times more calcium than milk), phosphorus, vitamin E, and many antioxidants. It contains all nine essential amino acids which makes it a complete protein. Quinoa is also very high in antioxidants, which help fight against aging and disease. It can be found in three different color varieties white, red, and black. Interestingly, the different types also have varying nutrient content. Black Quinoa has the lowest fat content, but has the highest omega 3 fatty acid. Red and Black Quinoa have nearly twice the vitamin E content of white Quinoa.
